This is a video that shows rice cultivation from planting, harvesting, processing, packaging and eventually cooking. It is a Taiwanese commercial farming operation and equipment they use to plant and harvest the rice is pretty amazing.
I had the same question, so I asked my kid who works in a rice bowl restaurant. He was familiar with it and said that it was a block of curry paste, perhaps with some corn starch. It thickens the broth.
At the last stage of cooking, a couple of blocks that are dissolved into hot water. What are they?
